Because perfume normally has at least moderate alcohol amounts, it will dry and fade your hair (if you color) after a bit.

This means they move much slower. Of course it won't reduce the number of molecules, I wasnt saying that. But it will reduce their speed so the chemical molecules will take longer to reach your nose, So you wont be able to smell it as easily.
